finished dish of rice and pastaHere is something a little different (for me) to serve as a side dish. I ran across it while looking through an old Gourmet magazine from June 2001. It apparently is quite common in several Latin American countries and I even found some videos in Spanish on how to make it. Good practice in my endless quest to learn more Spanish. We had it with shrimp last night. Easy and good.

  1. Heat oil in a heavy saucepan until hot but not smoking. Sauté pasta, stirring constantly, until browned, 3 to 4 minutes.
  2. Add rice and sauté, stirring, until coated with oil. Stir in scallion and garlic; then sauté about 1 minute.
  3. Add water and salt and bring to a boil. Reduce heat to low and cook, covered, until water is absorbed, about 15 minutes.
  4. Remove from heat and fluff with a fork. Let stand, covered 5 minutes.
